花蓮市博愛街、民國路一帶，是我到花蓮小旅行時常去覓食的地方，至於這次要分享的花蓮美食，則是位於博愛街上的日本料理一味屋 洄瀾。而這家將老屋重新裝潢的一味屋 洄瀾，因為屋子外觀呈現濃濃的日式風，之前每次經過都會不經意多看幾眼，這次終於要進去用餐了…
因為想在不干擾其它客人用餐情況下，好好地拍些照片，因此一味屋晚餐差不多要開始前，我便騎著小摺從住宿處悠閒地慢騎過來，準備拍照吃好料啦！
一味屋 洄瀾的名稱由來，後來進店用餐跟老闆娘聊天時，才知道有其意義。因為一味屋 洄瀾原本店址是在台北通化夜市（原名：乙味屋日本料理），後來因為當地進行都更，在考慮店面遷址時，由於老闆很喜歡花蓮，日後想在花蓮養老，所以在徵得廚師與服務人員同意後，將店面遷到博愛街現址，並使用花蓮舊名「洄瀾」，來跟一味屋其它分店做區別。
走進一味屋 洄瀾的玄關，就開始感受到日式風格氛圍了…
進到店裡，看到的是沒有太多裝潢，但整體呈現的氣氛，會讓我覺得是到一家溫馨小店用餐的感覺。而且，雖然我在晚餐時段剛開始不到10分鐘內就到了，但店裡已經有用餐的客人，而且看這些客人跟老闆娘的互動，就知道應該是這裡的老客人。
一味屋 洄瀾日本料理還有兩間包廂，可供人數較多的客人用餐。由於其中一間已經有客人，如果以當時沒有客人的這間包廂來看，最多坐到10個人應該是沒問題的。
遷到花蓮已經兩年多的一味屋 洄瀾，營造友善用餐環境也獲得肯定，花蓮縣政府與花蓮市公所也頒發感謝狀，並收錄在「友善花蓮好餐廳App」內。
店內一隅貼著許多照片，除了店內廚師拿著食材或是製作的餐點照，更多的是來用餐客人拍的紀念照片與寫下的鼓勵話語，我想這是讓這裡所有廚師與服務人員持續提供美味餐點與服務很重要的動力來源啊！
來日式料理店用餐，如果是我單人用餐，或是用餐人數不超過三個人的話，我一定選擇坐在吧檯區，因為這樣就可以近距離看到當天有可能吃到的食材，以及廚師製作餐點的情況。
選好吧檯區位置坐下後，老闆娘看我們有背背包，很快地就拿竹藍到位置這裡，讓我們放包包，服務真的很貼心呢！
翻了翻菜單，我發現一味屋 洄瀾日本料理提供的餐點，不管是握壽司、生魚片、烤物、鍋物、飯麵類都有，選擇相當多元。
除了單點菜色，店裡也有定食可供用餐客人選擇。
前面提到坐吧檯區，除了近看廚師大展手藝外，就是還能拍些其他用餐客人點的餐點，像是拍到的生魚片與海鮮丼，看起來都相當新鮮美味呢！
（以下請注意：未成年請勿飲酒，開車不喝酒，喝酒不開車）
這次用餐，在老闆娘推薦下，我們喝了一瓶廣島「中尾釀造株式會社」釀製的清酒誠鏡，光看這藍色的瓶身，以及隨附的小酒杯，就讓人覺得應該會很好喝才對。
沒記錯的話，這瓶清酒誠鏡酒精濃度是14%，一開始還很冰的時候喝超順口，等到比較不冰的時候喝，這時清酒會有的嗆辣味就會出現，使得入口會呈現不同的風味，但還是好喝。而且我們真的喜歡隨附的酒杯，所以離開前還請老闆娘幫我們清洗一下，然後帶回家做紀念。
等待餐點正式送上桌時，店裡服務人員先送來開胃小菜「柚子皮醃蘿蔔」。由於在醃製時有使用柚子皮，所以這裡的醃蘿蔔吃起來除了脆口，帶有水果的酸甜味道相當清爽，夏天來吃尤其適合！
南瓜豆腐（50元）。
南瓜豆腐是一味屋 洄瀾日本料理自家製作的，吃起來的口感滑嫩中帶著淡淡南瓜甜味，搭配些許的蝦卵提味，整體口感清爽，是適合夏天吃的一道菜。
鮭魚大根捲（280元）。
吃生魚片會搭配的白蘿蔔絲，一味屋 洄瀾的師傅做了些變化，直接切成薄片狀，然後包住生鮭魚肉，搭配現磨的哇莎米與鮭魚卵，吃到嘴裡，除了感受鮮甜鮭魚肉與鮭魚卵的味道，還多了切成片狀白蘿蔔的脆口感與淡淡清甜味，吃起來口感相當舒服！
蟹肉可麗餅球（120元）。
一味屋 洄瀾的蟹肉可麗餅球，外皮炸得酥脆不油，裡面的馬泥薯泥與蟹肉味道濃郁，單獨吃就很夠味！如果搭配隨附的松露沾醬一起品嚐，會多了沾醬的甜味，讓整個口感變得更豐富。
煙燻曼波魚。
煙燻曼波魚也是一味屋 洄瀾自家製作的，這是比較少見的曼波魚料理方式。而略帶一點煙燻味的煙燻曼波魚入口時，吃起來軟中帶有些許脆度的魚肉，搭配略帶鹹甜味醬汁，口感很舒服，等到咀嚼到生紫洋蔥絲時，紫洋蔥脆口且較辛辣的味道，又讓整體口感有了不同變化。
明太子烤竹筍（280元）。
明太子是我自己本身蠻喜歡的日式食物，而一味屋 洄瀾這裡將它跟綠竹筍做搭配一起燒烤。而實際品嚐時，竹筍內部依然保持脆口清甜，等到濃郁明太子醬香濃滋味衝出來時，嘴裡變成滿滿海鮮味，在味道變化上真的是很有趣的一道菜。
鰻魚星鰻雙鰻丼。
一味屋 洄瀾的菜單裡有鰻魚丼與星鰻丼，而這天老闆娘很佛心地把這需要從洗、拔刺到燒烤都需要手工費時處理的這兩種鰻魚，把它們搭配在一起，讓我一口氣能吃到台灣養殖鰻魚，以及日本進口星鰻兩種不同鰻魚的口感，真的是讓我大大感動啊！而後來老闆娘也告訴我這碗雙拼的雙鰻丼（380元），會在7月與8月這兩個期間限定推出，有到這裡用餐的大大千萬別錯過啊！
應該是對自己選用食材很有信心，所以一味屋 洄瀾廚師在燒烤鰻魚與星鰻時，並沒有沾附太多醬汁，除了能吃到鰻魚肉本身味道，整體味道也很夠味！而根據店裡服務人員說明，它們家鰻丼燒烤時使用的醬汁，是選擇鰻魚最富含鈣質的魚骨，以及膠質豐富的魚頭，然後慢火熬煮兩天，期間也要不停攪拌，所以才能製作出香氣與風味兼具的醬汁。而就我自己品嚐鰻魚與星鰻兩種魚肉吃起來的口感，我覺得星鰻肉質會更細緻一些，雖然價格不便宜，但很值得啦！
隨附的配菜部分，涮上微甜醬汁的玉子燒，吃起來口感滑嫩、味道香甜。
另一個配菜，是蠻難得能吃到的烤鰻魚肝。因為像手上這串烤鰻魚肝，就需要使用三隻鰻魚的肝，加上不新鮮的鰻魚肝一定不用的前提下，能吃到烤鰻魚肝真的是幸運啦！
紫蘇小黃瓜捲+柚子捲柿子。
酸甜的紫蘇醬，搭配脆口清甜的小黃瓜片，吃起來很清爽，是適合消暑氣的一道菜。
來自本的柚子捲柿子，使用新鮮柿子果肉製成甜度適中的柿子餡，然後搭配新鮮柚子一起製作，吃起來同時著有柿子甜味與柚子清爽香氣，很適合做為飯後茶點。
豆漿奶酪。
豆漿奶酪是一味屋 洄瀾自己製作的，這天搭配的是黑糖漿，因此吃起來在滑嫩細緻的豆漿奶酪中，多了一股黑糖香甜味，是很不錯的一道甜品。
這次在一味屋 洄瀾日本料理用餐，我覺得除了吃到的菜色都美味外，服務部分也值得一提，因為負責料理的廚師，會視我們實際吃的狀況陸續上菜，讓我們可以品嚐每道菜最美味的味道，加上老闆娘的熱誠服務，我想這也是一味屋 洄瀾會有不少熟客的重要原因之一。總之，各位大大之後到花蓮旅遊，有機會的話，不妨考慮來一味屋 洄瀾這裡，品嚐看看這裡的日式料理吧！
